That really depends on your style of playing and your stats.
The first time I had a pretty hard time against Jack of Blades, not the 1st battle, the 2nd one
only in the lost chapters.Why? My stats weren't that good and I didn't really see what he would do xD although if I would play through it again then I would pwn the living hell out of him.

The boss in Fe:SD
Warp staff + overlevelled Marth + Two healers = Warp to dragon, attack, get hit, heal fully. Enemy turn, he attacks, gets killed

Egg Dealer in Shadow the hedgehog, hit the 3 reel stopping buttons if one is missle or bomb, hit the other 2 and they r the same as the first 1 u pressed with homing attack.

the leech monger in demon souls, u dont have to get anywhere near it, shoot it down with arrows, if u stand on a certain ledge, u dont have to worry about getting hit at all.

Penultimate boss in the first playthrough of Drakengard 2, you spent some time running towards it, upwards a cliff, while being attacked by beam attacks that do decent damage, after which it falls in one attack...

Zubat and Koffing in Explorers of Sky, use your first damaging move like a few times, they both die really fast.

That sounds like a first or maybe even tutorial boss, those are supposed to be easy...
