I know they use an electrical charge to knock animals unconscious when they kill them in some parts of the world. It has the same effect as the tranquilizers, without the wait or having to worry about tranquilizer being in the meat. (Dunno if that even IS a worry, but hey, why risk it?)
I'd like to point out that if you find any animal sacred, wouldn't any by-product be sacred as well? I know that's kind of the mentality vegans follow, so correct me if I'm wrong.

I think it's ok as long as it's not killed.
I may be wring though.
And as for killing an animal while it's scared or whatever apparently makes the meat worse, I hear.
